đź›’ Ingredients:

  • 1.5 lbs boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil (for frying)
  • 3 garlic cloves, minced
  • 1/2 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha (optional, for extra heat)
  • Green onions and sesame seeds (for garnish)

⏱️ Prep Time:

  • Prep: 15 minutes
  • Cook: 15 minutes
  • Total: 30 minutes

🧑‍🍳 Instructions:

  1. Coat the Chicken: In a bowl, mix cornstarch, salt, and pepper. Toss the chicken pieces until evenly coated.
  2. Crisp the Chicken: Heat oil in a large pan over medium heat. Fry chicken pieces in batches until golden and crispy. Drain on paper towels.
  3. Make the Sauce: In the same pan, reduce to low heat. Sauté garlic for 30 seconds, then stir in sweet chili sauce, soy sauce, rice vinegar, and sriracha.
  4. Toss and Serve: Return the chicken to the pan, tossing to coat evenly in the sauce. Cook for 2–3 minutes until heated through.
  5. Garnish & Plate: Sprinkle with chopped green onions and sesame seeds before serving.

đź’ˇ Tips:

  • For ultra-crispy chicken, double-fry the pieces — let them cool for 5 minutes before the second fry.
  • Add sliced bell peppers or broccoli to make it a full meal.
  • Adjust the heat by adding more or less sriracha.

🧊 Storage:

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a pan over low heat for best texture.
