Berry Spinach Salad with Pecans, Feta & Balsamic Glaze

Fresh, vibrant, and bursting with flavor, this Berry Spinach Salad is the perfect balance of sweet, tangy, and crunchy. Juicy berries, creamy feta, toasted pecans, and a rich balsamic glaze come together for a stunning salad that’s both healthy and satisfying.

🛒 Ingredients:

  • 4 cups baby spinach
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/3 cup crumbled feta cheese
  • 1/3 cup pecans, toasted
  • 2 tbsp balsamic glaze
  • Optional: 1/4 red onion, thinly sliced
Optional Homemade Balsamic Dressing (if not using glaze):
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 cup olive oil
  • 1/2 tsp Dijon mustard
  • Salt & pepper to taste

🥗 Instructions:

  1. In a large bowl, add the baby spinach as a base.
  2. Top with strawberries, blueberries, crumbled feta, toasted pecans, and red onion if using.
  3. Drizzle with balsamic glaze just before serving.
  4. If using homemade dressing instead, whisk together all dressing ingredients and toss gently with the salad right before serving.

Tips:

  • Toast pecans in a dry skillet over medium heat for 3–5 minutes to bring out their nutty flavor.
