Caribbean Chicken and Spiced Rice Recipe
Bring the sunshine to your plate with this vibrant Caribbean Chicken and Spiced Rice dish. Infused with tropical flavors, warm spices, and a touch of heat, it’s the perfect weeknight dinner that tastes like a getaway.
🍗 Ingredients:
- 4 boneless chicken thighs
- 1 cup long-grain rice
- 1 onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp ground allspice
- ½ tsp paprika
- 1 tsp thyme
- ¼ tsp cayenne pepper (adjust to taste)
- 1 ½ cups chicken broth
- 2 tbsp olive oil
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro for garnish

🍳 Instructions:
- Marinate the Chicken
In a bowl, combine lime juice, paprika, allspice, cayenne, thyme, salt, and pepper. Coat the chicken and let it marinate for at least 20 minutes (or overnight for deeper flavor). - Sear the Chicken
Heat olive oil in a skillet. Sear the marinated chicken on both sides until golden. Remove and set aside. - Sauté the Veggies
In the same skillet, sauté chopped onions, garlic, and red bell pepper until soft. - Add the Rice & Broth
Stir in the rice and pour in the chicken broth. Return chicken to the pan. Cover and simmer for 18–20 minutes until rice is tender and chicken is fully cooked. - Garnish and Serve
Garnish with chopped cilantro and a squeeze of fresh lime. Serve hot!
