Cheesy Broccoli Chicken Rice Casserole (under 30-Mins)

A creamy, cheesy, one-pan dinner that’s picky-eater approved and perfect for busy weeknights.

Ingredients:

  • 1 cup cooked shredded chicken
  • 1 ½ cups cooked rice (white or brown)
  • 1 cup broccoli florets (lightly steamed or frozen & thawed)
  • 1 cup shredded cheddar cheese
  • 1 can (10 oz) cream of chicken soup (or homemade)
  • ⅓ cup milk
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • Optional: ¼ cup grated Parmesan, crushed crackers or breadcrumbs for topping

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a large bowl, mix together rice, chicken, broccoli, cream of chicken soup, milk, garlic powder, pepper, and half the cheese.
  3. Spread mixture into a greased baking dish.
  4. Top with remaining cheese (and breadcrumbs or crushed crackers if using).
  5. Bake uncovered for 20–25 minutes or until bubbly and golden.
  6. Let cool slightly and serve warm.

Tips:

  • Use rotisserie chicken to save time
  • Sub cream of chicken with a homemade version for a cleaner option
