- 12 oz penne or rigatoni pasta
- 4 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 2 cloves garlic, minced

- 1 cup shredded Gruyère cheese
- ½ cup grated Parmesan cheese
- 1 tbsp all-purpose flour
- 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)

- Cook Pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside. - Caramelize Onions:
