Fresh Summer Raspberry Tiramisu

A light and fruity twist on the Italian classic — no baking, just layers of creamy mascarpone, raspberry goodness, and ladyfingers.

This Fresh Raspberry Tiramisu is the ultimate no-bake dessert for summer. Made with layers of ladyfingers soaked in raspberry juice, whipped mascarpone cream, and fresh raspberries, it’s bright, creamy, and refreshing. Perfect for entertaining, baby showers, or an elevated family treat.

🛒 Ingredients (Serves 6–8):

  • 1 cup raspberry juice or raspberry puree (strained)
  • 2 tbsp lemon juice
  • 24 ladyfinger biscuits (savoiardi)
  • 8 oz (225g) mascarpone cheese
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups fresh raspberries
  • Optional: white chocolate shavings or mint for garnish

👩‍🍳 Instructions:

  1. In a shallow bowl, mix raspberry juice with lemon juice.
  2. In a large bowl, beat mascarpone, cream, powdered sugar, and vanilla until smooth and fluffy.
  3. Quickly dip ladyfingers into the raspberry juice (don’t soak too long), and layer into the bottom of a dish.
  4. Spread half of the mascarpone cream over the ladyfingers. Add a layer of raspberries.
  5. Repeat with another layer of soaked ladyfingers and the remaining cream.
  6. Garnish with fresh raspberries and white chocolate or mint. Chill for at least 4 hours before serving.

🧁 Tips:

  • You can use thawed frozen raspberries for the juice
  • For extra sweetness, drizzle a bit of honey or raspberry syrup on top
  • Serve in glasses or jars for single-serve portions
