With a chocolate cookie crust, a creamy chocolate filling, and an optional ganache topping, they’re ideal for lunchboxes, parties, or make-ahead treats for busy moms.

🛒 Ingredients (Makes ~12 mini cheesecakes):
- 12 chocolate sandwich cookies (like Oreos), crushed
- 2 tbsp melted butter
- 8 oz (225g) cream cheese, softened
- ¼ cup sour cream
- ¼ cup sugar
- 1 egg
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- Optional: melted chocolate or ganache for topping
👩🍳 Instructions:
- Preheat oven to 325°F (160°C). Line a mini muffin pan with paper liners.
- Mix crushed cookies and melted butter, press into liners to form a base.
- In a bowl, beat cream cheese, sugar, and cocoa powder until smooth. Add egg, vanilla, and sour cream.
