These Mini Chocolate Cheesecake Bites are everything you love about a classic cheesecake, shrunk down into perfectly portioned bites. With a chocolate cookie crust, a creamy chocolate filling, and an optional ganache topping, they’re ideal for lunchboxes, parties, or make-ahead treats for busy moms.

🛒 Ingredients (Makes ~12 mini cheesecakes):

  • 12 chocolate sandwich cookies (like Oreos), crushed
  • 2 tbsp melted butter
  • 8 oz (225g) cream cheese, softened
  • ¼ cup sour cream
  • ¼ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • Optional: melted chocolate or ganache for topping

👩‍🍳 Instructions:

  1. Preheat oven to 325°F (160°C). Line a mini muffin pan with paper liners.
  2. Mix crushed cookies and melted butter, press into liners to form a base.
