Ingredients
  

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter
  • 1 1/2 cups brown sugar
  • 1/4 cup milk
  • 3 cups old-fashioned oats
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt

Method
 

  1. In a medium saucepan, combine butter, pumpkin puree, brown sugar, and milk over medium heat.
  2. Stir constantly until melted and smooth, about 3–4 minutes.
  3. Remove from heat, stir in vanilla extract, pumpkin pie spice, and salt.
  4. Fold in oats until evenly coated.
  5. Drop spoonfuls onto parchment-lined baking sheet, pressing lightly if desired.
  6. Let cool 15–20 minutes until set.
  7. Store in an airtight container up to 3 days.

Notes

Add chocolate chips or nuts for extra flavor. Adjust oats for desired cookie texture.
