- In a medium saucepan, combine butter, pumpkin puree, brown sugar, and milk over medium heat.
- Stir constantly until melted and smooth, about 3–4 minutes.
- Remove from heat, stir in vanilla extract, pumpkin pie spice, and salt.
- Fold in oats until evenly coated.
- Drop spoonfuls onto parchment-lined baking sheet, pressing lightly if desired.
- Let cool 15–20 minutes until set.
- Store in an airtight container up to 3 days.
Notes
Add chocolate chips or nuts for extra flavor. Adjust oats for desired cookie texture.
