Pancake Batter
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1.5 cups whole milk
  • 2 large eggs
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 large apple (peeled, diced) Honeycrisp or Gala
  • 1 tablespoon brown sugar
  • 1 teaspoon lemon juice
Vanilla Maple Syrup
  • 0.5 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter

Method
 

  1. Cook diced apples with brown sugar, cinnamon, and lemon juice until tender and syrupy.
  2. In a bowl, whisk flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients.
  4. Fold in caramelized apples.
  5. Cook pancakes on a buttered griddle until golden on both sides.
  6. Warm maple syrup with vanilla and butter to make the vanilla maple syrup.
  7. Serve pancakes warm with vanilla maple syrup and apple garnish.

Notes

Best served warm with extra syrup and a sprinkle of cinnamon sugar.
