Baked Beef Chiles Rellenos Casserole

A hearty, cheesy, oven-baked twist on classic chiles rellenos featuring roasted green chiles, seasoned beef, and a fluffy egg topping.

Ingredients
  

Casserole
  • 2 lbs ground beef
  • 8-10 roasted green chiles whole, peeled
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cups cheddar cheese shredded
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp black pepper
Egg Topping
  • 5 eggs large
  • 1.5 cups milk
  • 1 tbsp cornstarch or flour
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. Brown ground beef in a skillet, drain fat, then add onion and garlic and cook until softened.
  3. Stir in cumin, chili powder, salt, and pepper; cook 1–2 minutes.
  4. Layer half the green chiles on the bottom of the baking dish.
  5. Spread beef mixture evenly over the chile layer and top with 1 cup cheese.
  6. Add remaining chiles over the cheese.
  7. Whisk eggs, milk, cornstarch, and salt; pour over casserole layers.
  8. Top with remaining cheese and bake 40–45 minutes until golden and set.

Notes

For extra heat, use hot Hatch chiles or add jalapeños.
