Ingredients
  

Cookie Dough
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup creamy peanut butter
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 18 pieces soft caramel squares
  • flaky sea salt for topping

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream peanut butter, butter, and sugars until light and fluffy.
  4. Add egg and vanilla extract, mixing until smooth.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Wrap dough around caramel pieces and roll into balls.
  7. Place on baking sheets, sprinkle with sea salt, and bake 10–12 minutes.
  8. Cool slightly before transferring to wire rack.

Notes

Do not overbake for maximum chewiness.
