- Combine feta, cream cheese, olive oil, lemon juice, lemon zest, and garlic in a food processor.
- Pulse until the mixture is creamy but still slightly textured.
- Add most of the chopped olives and pulse again briefly to incorporate.
- Transfer to a bowl and fold in parsley and pepper. Add salt only if needed.
- Chill for 30 minutes before serving for best flavor.
Notes
For a spicier version, add red pepper flakes. Blend longer for a smoother texture or pulse lightly for a chunkier spread.
