Ingredients
  

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried thyme or rosemary
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • fresh parsley optional garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry. Rub with olive oil, garlic, paprika, salt, pepper, and thyme.
  3. Heat oven-safe skillet over medium-high heat. Sear chicken skin-side down 4–5 minutes until golden. Flip and cook 2 minutes.
  4. Remove chicken. Pour in chicken broth, scraping browned bits. Stir in cream and butter until combined.
  5. Return chicken skin-side up. Bake 20–25 minutes until internal temp 165°F (74°C).
  6. Remove from oven, let rest 5 minutes. Spoon sauce over chicken, garnish with parsley, and serve warm.

Notes

Sear chicken well for flavor. Spoon sauce over just before serving for extra richness.
