Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 cloves garlic minced
  • 0.75 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup sun-dried tomatoes chopped
  • 1 tbsp butter

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning. Sear lightly in olive oil until golden.
  2. Add garlic, broth, cream, Parmesan, and sun-dried tomatoes to skillet; stir to combine.
  3. Transfer chicken to crockpot and pour sauce over top.
  4. Cook on LOW for 3–4 hours or HIGH for 2 hours until chicken is tender.
  5. Stir in butter before serving. Garnish with rosemary or thyme.

Notes

For a thicker sauce, mix 1 tbsp cornstarch with 1 tbsp cold water and add during the last 15 minutes.
