Ingredients
  

Pumpkin Mousse
  • 1 cup pumpkin puree not pumpkin pie filling
  • 0.75 cup plain Greek yogurt or coconut yogurt for dairy-free
  • 0.25 cup maple syrup or to taste
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground ginger
  • 1 pinch salt
  • 0.5 cup whipped coconut cream folded in
Toppings
  • crushed pecans optional
  • ground cinnamon for garnish
  • dark chocolate shavings optional

Method
 

  1. In a large bowl, whisk pumpkin puree, yogurt, maple syrup, vanilla, and spices until smooth.
  2. Gently fold in whipped coconut cream with a spatula until fully incorporated but still airy.
  3. Taste and adjust sweetness or spice as desired.
  4. Spoon mousse into serving dishes and refrigerate for at least 1 hour to chill and set.
  5. Before serving, top with whipped cream, cinnamon, and crushed pecans.

Notes

For a vegan version, use coconut yogurt and coconut whipped cream. Serve chilled.
