Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup unsweetened applesauce
Apple Filling
  • 2 medium apples peeled and diced
  • 2 tbsp unsalted butter
  • 0.25 cup brown sugar
  • 0.5 tsp cinnamon
  • 1 tsp lemon juice
Topping
  • 0.25 cup caramel sauce
  • flaky sea salt for sprinkling

Method
 

  1. Prepare apple filling by cooking diced apples with butter, brown sugar, cinnamon, nutmeg, and lemon juice for 6–8 minutes until soft. Cool completely.
  2. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Cream butter with brown sugar and granulated sugar until light and fluffy.
  4. Beat in egg, vanilla, and applesauce until smooth.
  5. Add dry ingredients to wet ingredients until a soft dough forms. Chill for 30 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop dough balls, flatten, and fill with apple filling. Seal with another piece of dough.
  8. Bake 12–14 minutes or until golden. Cool on a wire rack.
  9. Drizzle with caramel and sprinkle flaky sea salt before serving.

Notes

Use firm apples for the best texture. Chill the dough for structure and balance sweetness with salt for a gourmet finish.
