- Prepare apple filling by cooking diced apples with butter, brown sugar, cinnamon, nutmeg, and lemon juice for 6–8 minutes until soft. Cool completely.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream butter with brown sugar and granulated sugar until light and fluffy.
- Beat in egg, vanilla, and applesauce until smooth.
- Add dry ingredients to wet ingredients until a soft dough forms. Chill for 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough balls, flatten, and fill with apple filling. Seal with another piece of dough.
- Bake 12–14 minutes or until golden. Cool on a wire rack.
- Drizzle with caramel and sprinkle flaky sea salt before serving.
Notes
Use firm apples for the best texture. Chill the dough for structure and balance sweetness with salt for a gourmet finish.
