  • 1 lb Italian sausage mild or hot
  • 10 cups bread cubes toasted
  • 1 large onion diced
  • 3 celery ribs diced
  • 3 cloves garlic minced
  • 0.5 cup unsalted butter
  • 2.5 cups chicken broth
  • 2 eggs beaten
  • 2 tbsp fresh sage minced
  • 1 tbsp fresh thyme minced
  • 1 tbsp fresh rosemary minced
  • 0.25 cup fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Toast bread cubes at 300°F (150°C) for 20–25 minutes until dry and crisp.
  2. Brown sausage in a skillet, breaking it into crumbles. Remove and set aside.
  3. Add butter to pan drippings, cook onion and celery until softened.
  4. Stir in garlic and herbs, cooking 1 minute more.
  5. Combine bread cubes, sausage, and vegetable mixture in a bowl.
  6. Add broth and eggs, mixing gently until moistened.
  7. Transfer to a greased 9x13 dish and bake at 350°F (175°C) for 35–40 minutes.

Notes

For a crisp top, bake uncovered. For softer stuffing, bake covered with foil.
