Ingredients
  

Cookie Dough
  • 2.75 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
Cinnamon-Sugar Coating
  • 0.25 cup granulated sugar
  • 1.5 tsp ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, cream of tartar, baking soda, and salt in a bowl.
  3. Beat butter and sugar until light and fluffy, about 2 minutes.
  4. Add eggs and vanilla, mixing until combined.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Combine sugar and cinnamon in a small bowl for coating.
  7. Roll dough into 1½-inch balls and coat each in cinnamon-sugar mixture.
  8. Place 2 inches apart on baking sheets and bake 9–11 minutes, until edges are set.
  9. Cool for 5 minutes on the sheet, then transfer to a wire rack.

Notes

For extra soft cookies, remove them from the oven while the centers still look slightly underdone.
