Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, cream of tartar, baking soda, and salt in a bowl.
- Beat butter and sugar until light and fluffy, about 2 minutes.
- Add eggs and vanilla, mixing until combined.
- Gradually mix in dry ingredients until a soft dough forms.
- Combine sugar and cinnamon in a small bowl for coating.
- Roll dough into 1½-inch balls and coat each in cinnamon-sugar mixture.
- Place 2 inches apart on baking sheets and bake 9–11 minutes, until edges are set.
- Cool for 5 minutes on the sheet, then transfer to a wire rack.
Notes
For extra soft cookies, remove them from the oven while the centers still look slightly underdone.
