Easy Yellow Squash Casserole: A Family Comfort Dish

Creamy, cheesy, and loaded with tender squash — this comforting casserole is a southern favorite that brings the whole family to the table. Whether served as a side dish or a light main, it’s always a hit!


🧀 Ingredients:

  • 4 cups yellow squash (thinly sliced)
  • ½ onion (chopped)
  • 1 tbsp butter
  • 2 eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs
  • Salt & pepper to taste
  • Optional topping: extra breadcrumbs + melted butter

👩‍🍳 Instructions:

  1. Preheat Oven to 175°C (350°F).
  2. Cook Squash & Onions: In a pan, sauté squash and onions in butter for 5–7 minutes until soft.
  3. Mix: In a large bowl, whisk eggs and milk. Add cheese, cooked squash mixture, breadcrumbs, salt, and pepper.
  4. Assemble: Pour into a greased baking dish. Top with extra breadcrumbs and a drizzle of melted butter for a golden crust.
  5. Bake: 30–35 minutes until the top is golden and the center is set.
