Easy Yellow Squash Casserole: A Family Comfort Dish

🧀 Ingredients:
- 4 cups yellow squash (thinly sliced)
- ½ onion (chopped)
- 1 tbsp butter
- 2 eggs
- ½ cup milk
- 1 cup shredded cheddar cheese
- ½ cup breadcrumbs
- Salt & pepper to taste
- Optional topping: extra breadcrumbs + melted butter

- Preheat Oven to 175°C (350°F).
- Cook Squash & Onions: In a pan, sauté squash and onions in butter for 5–7 minutes until soft.
- Mix: In a large bowl, whisk eggs and milk. Add cheese, cooked squash mixture, breadcrumbs, salt, and pepper.
- Assemble: Pour into a greased baking dish. Top with extra breadcrumbs and a drizzle of melted butter for a golden crust.
