- Preheat oven to 175°C (350°F). Grease a baking dish with butter or cooking spray.
- Sauté the sliced yellow squash and chopped onions in butter over medium heat for 5–7 minutes, until soft. Remove from heat.
- In a large bowl, whisk eggs and milk until smooth. Stir in shredded cheddar cheese, cooked squash mixture, breadcrumbs, salt, and pepper.
- Pour mixture into the prepared baking dish. For a golden topping, sprinkle extra breadcrumbs and drizzle melted butter over the top.
- Bake for 30–35 minutes, until the casserole is golden and the center is set. Let cool slightly before serving.
