Ingredients
  

Squash & Onions
  • 4 cups yellow squash thinly sliced
  • 1/2 onion chopped onion
  • 1 tbsp butter
Casserole Mix
  • 2 eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • to taste salt & pepper
Optional Topping
  • 2 tbsp melted butter drizzle over extra breadcrumbs

Method
 

  1. Preheat oven to 175°C (350°F). Grease a baking dish with butter or cooking spray.
  2. Sauté the sliced yellow squash and chopped onions in butter over medium heat for 5–7 minutes, until soft. Remove from heat.
  3. In a large bowl, whisk eggs and milk until smooth. Stir in shredded cheddar cheese, cooked squash mixture, breadcrumbs, salt, and pepper.
  4. Pour mixture into the prepared baking dish. For a golden topping, sprinkle extra breadcrumbs and drizzle melted butter over the top.
  5. Bake for 30–35 minutes, until the casserole is golden and the center is set. Let cool slightly before serving.

Notes

This cheesy yellow squash casserole is perfect as a side dish for weeknight dinners or holiday gatherings. Feel free to add extra herbs like thyme or parsley for an extra burst of flavor. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
