Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1 can cannellini beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.33 cup red onion finely diced
  • 0.25 cup olive oil extra virgin
  • 3 tbsp lemon juice fresh
  • 1 tsp oregano dried

Method
 

  1. Combine beans, tomatoes, cucumber, and red onion in a large bowl.
  2. Whisk olive oil, lemon juice, and oregano together.
  3. Pour dressing over salad and toss well.
  4. Let marinate for 10 minutes before serving.

For best flavor, allow the salad to marinate longer if time permits.
