- Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
- Heat olive oil in a skillet and sauté garlic until fragrant.
- Add tomatoes and cook until slightly softened.
- Stir in olives and cooked pasta, adding reserved pasta water as needed.
- Add spinach and toss until wilted.
- Remove from heat and stir in lemon zest, lemon juice, and feta.
Notes
Add grilled chicken or shrimp for extra protein.
