Main Ingredients
  • 4 cod fillets fresh or thawed
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup coconut milk full-fat
  • 1 lemon juice and zest
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 0.5 tsp chili flakes optional
  • 1 tsp honey or maple syrup optional
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Pat cod fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet and sear cod for 2–3 minutes per side. Remove and set aside.
  3. Sauté garlic in the same pan until fragrant.
  4. Add coconut milk, lemon juice, zest, and seasonings. Simmer briefly.
  5. Return cod to the skillet and simmer until fully cooked and flaky.
  6. Garnish with cilantro and serve hot.

Notes

Best served immediately with rice or vegetables.
