Method
- Pat cod fillets dry and season with salt and pepper.
- Heat olive oil in a skillet and sear cod for 2–3 minutes per side. Remove and set aside.
- Sauté garlic in the same pan until fragrant.
- Add coconut milk, lemon juice, zest, and seasonings. Simmer briefly.
- Return cod to the skillet and simmer until fully cooked and flaky.
- Garnish with cilantro and serve hot.

Best served immediately with rice or vegetables.
