Ingredients
  

Salad Base
  • 5 cups baby spinach
  • 1.5 cups blueberries
  • 0.5 small red onion thinly sliced
Toppings
  • 0.5 cup feta cheese crumbled
  • 0.33 cup walnuts toasted
  • 0.5 avocado optional, sliced
Dressing
  • 3 tbsp olive oil
  • 1.5 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Method
 

  1. Wash and dry spinach thoroughly.
  2. Add spinach to a large salad bowl.
  3. Top with blueberries and sliced red onion.
  4. Add feta cheese, walnuts, and avocado if using.
  5. Whisk together olive oil, lemon juice, honey, and Dijon mustard.
  6. Drizzle dressing over salad just before serving.
  7. Toss gently and serve immediately.

Notes

Best served fresh. Add dressing only before eating to maintain crisp texture.
