Sauce
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 15 oz crushed tomatoes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp crushed red pepper flakes optional
  • 0.5 tsp sugar to balance acidity
  • 0.5 cup heavy cream or half-and-half
  • 0.25 cup Parmesan cheese grated
Gnocchi
  • 16 oz potato gnocchi
  • 1 tbsp butter
  • 0.25 cup reserved pasta water optional
Toppings
  • 4 oz burrata cheese torn
  • fresh basil leaves for garnish
  • extra Parmesan optional
  • olive oil for drizzling

Method
 

  1. Cook gnocchi in salted boiling water until they float. Drain and set aside.
  2. Heat olive oil in a large skillet and sauté garlic until fragrant.
  3. Add crushed tomatoes, salt, pepper, sugar, and chili flakes. Simmer for 10 minutes.
  4. Stir in cream and Parmesan until smooth and creamy.
  5. Add cooked gnocchi and toss to coat, thinning with pasta water if needed.
  6. Top with torn burrata, basil, Parmesan, and olive oil drizzle before serving.

Notes

For extra depth, add sautéed mushrooms or spinach. Burrata can be replaced with fresh mozzarella if desired.
