  • 1.5 lbs boneless skinless chicken breasts cut into bite-sized pieces
  • 1 lb fresh green beans trimmed
  • 2 tbsp cornstarch
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 0.25 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 0.5 cup low-sodium chicken broth
  • 1 tbsp cornstarch for slurry
  • 2 tbsp water for slurry
  • 1 tbsp toasted sesame seeds
  • 2 green onions sliced

Equipment

Method
 

  1. Season and coat chicken with cornstarch.
  2. Blanch green beans for 2-3 minutes and set aside.
  3. Whisk sauce ingredients together.
  4. Cook chicken in hot skillet until golden and cooked through.
  5. Sauté garlic and ginger until fragrant.
  6. Add green beans and stir fry briefly.
  7. Return chicken to pan and pour in sauce.
  8. Stir in cornstarch slurry and cook until thickened.
  9. Garnish with sesame seeds and green onions before serving.

Notes

For extra spice, add red pepper flakes or sriracha. Can substitute chicken thighs for juicier texture.
