Ingredients
  

Cake Batter
  • 2 cups soft pitted dates
  • 1 cup milk
  • 2 eggs large
  • 1.5 cups self-rising flour

Equipment

  • Mixing bowls
  • 8-inch cake pan
  • Wire rack
  • Blender or food processor

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line an 8-inch cake pan.
  2. Blend dates and milk until smooth and creamy.
  3. Add eggs and blend again until fully combined.
  4. Transfer mixture to a bowl and gently fold in self-rising flour.
  5. Pour batter into prepared cake pan and smooth the top.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for 10 minutes before transferring to a wire rack.
  8. Slice and serve warm or at room temperature.

Notes

For extra flavor, add cinnamon, walnuts, or chocolate chips to the batter before baking.
