Ingredients
  

Noodles and Sauce
  • 8 oz dry noodles spaghetti, ramen, or rice noodles
  • 0.25 cup peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sesame oil
  • 1 tsp ginger freshly grated
  • 1 clove garlic minced
  • 2-4 tbsp warm water to thin sauce
  • 2 green onions sliced for garnish
  • 1 tbsp sesame seeds optional garnish

Method
 

  1. Cook noodles according to package instructions. Drain and rinse under cold water.
  2. Whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Add warm water until smooth and pourable.
  3. Toss noodles with peanut sauce until evenly coated.
  4. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

Adjust water to reach desired sauce consistency. Add protein or vegetables to make it a full meal.
