Ingredients
  

Cake Batter
  • 3 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 2.5 cups granulated sugar
  • 5 eggs large
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup 7UP lemon-lime soda
Lemon Glaze
  • 1.5 cups powdered sugar
  • 2-3 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp milk or cream

Method
 

  1. Preheat oven to 325°F (165°C) and grease a bundt pan thoroughly.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing after each addition.
  5. Mix in lemon zest, lemon juice, and vanilla.
  6. Add flour mixture alternating with 7UP soda until batter is smooth.
  7. Pour batter into prepared bundt pan.
  8. Bake 60–70 minutes until a toothpick comes out clean.
  9. Cool 15 minutes before removing from pan.
  10. Mix glaze ingredients and drizzle over cooled cake.

Notes

For extra lemon flavor add additional zest to the glaze.
