Method
- Preheat oven to 325°F (165°C) and grease a bundt pan thoroughly.
- Whisk together flour, baking powder, and salt in a bowl.
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing after each addition.
- Mix in lemon zest, lemon juice, and vanilla.
- Add flour mixture alternating with 7UP soda until batter is smooth.
- Pour batter into prepared bundt pan.
- Bake 60–70 minutes until a toothpick comes out clean.
- Cool 15 minutes before removing from pan.
- Mix glaze ingredients and drizzle over cooled cake.
Notes
For extra lemon flavor add additional zest to the glaze.
