Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Sauté onion in olive oil until soft. Add garlic and cook briefly.
- Add spinach and cook until wilted. Drain excess moisture.
- Mix spinach with feta, herbs, salt, and pepper.
- Fill pastry dough, fold or roll, and place on baking sheet.
- Bake until golden and crisp, about 30 minutes.
Notes
Can be made ahead and frozen before baking.
