Ingredients
  

Filling
  • 4 cups fresh spinach chopped
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 2 tbsp fresh herbs parsley or dill
Pastry
  • 1 package pastry dough phyllo or puff pastry

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Sauté onion in olive oil until soft. Add garlic and cook briefly.
  3. Add spinach and cook until wilted. Drain excess moisture.
  4. Mix spinach with feta, herbs, salt, and pepper.
  5. Fill pastry dough, fold or roll, and place on baking sheet.
  6. Bake until golden and crisp, about 30 minutes.

Notes

Can be made ahead and frozen before baking.
