Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup dried cherries chopped
  • 1/2 cup sliced almonds
  • 2 tbsp milk optional, for brushing top

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
  2. Whisk flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then vanilla and almond extracts.
  5. Alternate adding flour mixture and sour cream, mixing until just combined.
  6. Fold in dried cherries and 1/4 cup sliced almonds.
  7. Pour batter into pan, smooth top, sprinkle remaining almonds, brush with milk if desired.
  8. Bake 50–60 minutes or until toothpick comes out clean. Cool and slice.

Notes

Soaking dried cherries for 10 minutes in warm water or juice enhances their flavor and juiciness.
