  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp almond extract
  • 0.5 tsp vanilla extract
  • 0.25 cup sliced almonds plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in egg, almond extract, and vanilla extract until combined.
  5. Gradually mix in dry ingredients until soft dough forms.
  6. Scoop dough into balls, flatten slightly, and sprinkle with sliced almonds.
  7. Bake 10–12 minutes until edges are lightly golden. Cool on wire rack.
  8. Optional: Dust with powdered sugar before serving.

Notes

Perfect for gifting and holiday trays. Dough can be chilled before baking for thicker cookies.
