- Heat oil in a large skillet over medium heat. Add cumin seeds and cook until fragrant.
- Add onions and sauté until golden brown.
- Stir in garlic and ginger and cook for 1 minute.
- Add ground meat and cook until browned completely.
- Mix in tomatoes and tomato paste until softened.
- Add coriander, turmeric, paprika, garam masala, chili powder, salt, and pepper.
- Stir in potatoes and green chilies.
- Pour in water and simmer covered for 20–25 minutes until potatoes are tender.
- Cook uncovered for 5 additional minutes to thicken if needed.
- Garnish with cilantro and serve hot with rice or naan.
Notes
For extra flavor, use freshly ground spices and allow the curry to simmer slowly. Add peas for additional texture and sweetness.
