Ingredients
  

Angel Food Cake
  • 12 egg whites room temperature
  • 1.5 cups granulated sugar divided
  • 1 cup cake flour
  • 1.5 tsp cream of tartar
  • 1 tsp vanilla extract
  • 0.25 tsp almond extract optional
  • 0.5 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Do not grease the tube pan.
  2. Whisk cake flour with 1/2 cup sugar; sift 3 times.
  3. Beat egg whites and cream of tartar until soft peaks form.
  4. Slowly add remaining 1 cup sugar until stiff peaks form.
  5. Mix in vanilla and almond extract.
  6. Fold in flour mixture in 3 additions.
  7. Transfer batter to ungreased tube pan and smooth top.
  8. Bake 35–40 minutes until top is golden and springs back.
  9. Invert pan and cool completely before removing.

Notes

Use only fresh egg whites, not carton. Cooling upside down prevents collapse.
