Ingredients
  

Cheese Log
  • 16 oz cream cheese softened
  • 1 cup shredded mozzarella
  • 0.5 cup salami finely chopped
  • 0.33 cup green olives chopped
  • 0.33 cup black olives chopped
  • 0.33 cup roasted red peppers chopped
  • 2 tbsp parsley chopped
  • 1 tbsp basil chopped
  • 1 tsp Italian seasoning
  • 1 clove garlic minced
  • 0.25 tsp black pepper
Coating
  • 0.25 cup pistachios finely chopped
  • 2 tbsp parsley chopped
  • 2 tbsp roasted red peppers finely diced

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. In a mixing bowl, combine softened cream cheese and shredded mozzarella until smooth.
  2. Add chopped salami, olives, roasted red peppers, herbs, Italian seasoning, garlic, and black pepper.
  3. Mix until evenly combined.
  4. Place mixture on plastic wrap and shape into a log.
  5. Wrap tightly and refrigerate for at least 2 hours.
  6. Combine pistachios, parsley, and diced roasted red peppers on a plate.
  7. Unwrap chilled cheese log and roll in coating mixture.
  8. Transfer to serving platter and serve with crackers or toasted bread.

Notes

Chill the cheese log well before serving to help it hold its shape. You can prepare it up to two days ahead for parties.
