- Preheat oven to 375°F (190°C). Grease a baking dish.
- Cut a pocket into each chicken breast without slicing all the way through.
- Season inside and outside with salt, pepper, and garlic powder.
- Stuff each pocket with Brie, apple slices, and spinach. Secure with toothpicks or twine.
- Heat olive oil in a skillet and sear chicken 2–3 minutes per side until golden brown.
- Transfer to baking dish, sprinkle with thyme, and bake for 20–25 minutes until cooked through.
- Remove toothpicks/twine, slice slightly, and serve warm.
Notes
Try swapping Brie for Camembert or adding toasted pecans for extra crunch. Drizzle with honey or balsamic glaze for added flavor.
