Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 4 oz Brie cheese sliced
  • 1 medium apple thinly sliced
  • 1 cup fresh spinach leaves
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves or 1/2 tsp dried
  • to taste salt and black pepper
  • 1 tsp garlic powder
  • toothpicks or kitchen twine for securing chicken

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. Season inside and outside with salt, pepper, and garlic powder.
  4. Stuff each pocket with Brie, apple slices, and spinach. Secure with toothpicks or twine.
  5. Heat olive oil in a skillet and sear chicken 2–3 minutes per side until golden brown.
  6. Transfer to baking dish, sprinkle with thyme, and bake for 20–25 minutes until cooked through.
  7. Remove toothpicks/twine, slice slightly, and serve warm.

Notes

Try swapping Brie for Camembert or adding toasted pecans for extra crunch. Drizzle with honey or balsamic glaze for added flavor.
