Ingredients
  

  • 1 lb ground turkey 93% lean
  • 1 medium apple peeled and shredded
  • 1/2 cup breadcrumbs panko or plain
  • 1/4 cup Parmesan cheese grated
  • 1 egg
  • 2 tbsp fresh sage finely chopped (or 1 tsp dried)
  • 1 tbsp fresh parsley chopped
  • 2 cloves garlic minced
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg optional
  • 1 tbsp olive oil for baking sheet
  • 1/4 cup apple cider optional glaze
  • 1 tbsp honey optional glaze

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Brush lightly with olive oil.
  2. Peel and shred the apple using a box grater. Pat lightly with a paper towel to remove excess moisture.
  3. In a large bowl, combine ground turkey, shredded apple, breadcrumbs, Parmesan, egg, sage, parsley, garlic, onion powder, salt, pepper, and nutmeg. Mix until just combined.
  4. Roll into 1-inch meatballs and place on prepared baking sheet.
  5. Bake for 18–20 minutes, until golden brown and cooked through (165°F internal temp).
  6. Optional: Simmer apple cider and honey until slightly thickened. Drizzle over meatballs.
  7. Serve hot, garnished with fresh herbs.

Notes

Freeze uncooked meatballs on a tray, then store in a freezer bag for up to 2 months. Reheat straight from frozen.
