Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup apple butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg optional

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter, apple butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in egg and vanilla extract until smooth.
  4. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to wet ingredients until dough forms.
  6. Roll dough into 1-inch balls and coat in granulated sugar.
  7. Place 2 inches apart on baking sheet and flatten slightly.
  8. Bake 10–12 minutes until edges are lightly golden.
  9. Cool 5 minutes on baking sheet, then transfer to wire rack to cool completely.

Notes

Cookies stay soft for days when stored in an airtight container. Add a drizzle of glaze or extra cinnamon sugar for decoration.
