Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, apple butter, granulated sugar, and brown sugar until fluffy.
- Beat in egg and vanilla extract until smooth.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to wet ingredients until dough forms.
- Roll dough into 1-inch balls and coat in granulated sugar.
- Place 2 inches apart on baking sheet and flatten slightly.
- Bake 10–12 minutes until edges are lightly golden.
- Cool 5 minutes on baking sheet, then transfer to wire rack to cool completely.
Notes
Cookies stay soft for days when stored in an airtight container. Add a drizzle of glaze or extra cinnamon sugar for decoration.
