Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups apples finely diced, Granny Smith or Honeycrisp
  • 1/2 cup all-purpose flour for crumble
  • 1/3 cup brown sugar for crumble
  • 1 tsp ground cinnamon for crumble
  • 1/4 cup unsalted butter cold, cubed, for crumble
  • 1/2 cup powdered sugar for glaze, optional
  • 1-2 tbsp milk for glaze
  • 1/2 tsp vanilla extract for glaze

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl.
  3. Cream butter with granulated sugar and brown sugar until fluffy. Add eggs and vanilla.
  4. Alternate adding dry ingredients and buttermilk. Mix gently.
  5. Fold in diced apples.
  6. Prepare crumble: Mix flour, brown sugar, and cinnamon. Cut in butter until crumbly.
  7. Fill cupcake liners with batter and top with crumble.
  8. Bake 20–24 minutes until toothpick comes out clean. Cool.
  9. Optional: Mix powdered sugar, milk, and vanilla. Drizzle over cooled cupcakes.

Notes

For extra indulgence, top with cream cheese frosting or caramel drizzle. Best served slightly warm.
