Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp salt
  • 1 cup vegetable oil
  • 1.5 cups granulated sugar
  • 3 eggs large
  • 2 tsp vanilla extract
  • 3 cups chopped apples peeled
  • 1 cup chopped pecans toasted
Caramel Glaze
  • 0.5 cup unsalted butter
  • 0.5 cup brown sugar
  • 0.25 cup heavy cream
  • 0.5 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch pan or bundt pan.
  2. Whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk oil, sugar, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients; stir just until combined.
  5. Fold in chopped apples and pecans.
  6. Pour batter into pan and bake 45–55 minutes until toothpick comes out clean.
  7. Cool cake for 15 minutes before glazing.
  8. In a saucepan, melt butter, then add brown sugar and cream; cook 2–3 minutes.
  9. Remove from heat, add vanilla and salt, and pour warm glaze over cake.

Notes

Best served warm. Caramel glaze can be doubled for extra topping.
