Authentic Jamaican Brown Stew Chicken

Ingredients
  

Chicken
  • 3 lbs chicken pieces bone-in, skin on
  • 2 tbsp browning sauce
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp allspice
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 3 scallions chopped
  • 2 sprigs fresh thyme
  • 1 Scotch bonnet pepper whole
  • 1 large onion sliced
  • 1 bell pepper sliced
  • 1 carrot sliced
  • 2 tbsp vegetable oil
  • 1 cup water or chicken stock

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Chef’s knife
  • Mixing bowl

Method
 

  1. Season chicken thoroughly with herbs, spices, sauces, and aromatics. Marinate at least 2 hours or overnight.
  2. Heat oil in a pot and brown chicken pieces on all sides. Remove and set aside.
  3. Sauté onions, bell peppers, and carrots in the same pot until softened.
  4. Return chicken to pot, add marinade and liquid, and bring to a boil.
  5. Reduce heat, add Scotch bonnet, cover, and simmer 30–40 minutes until tender.
  6. Adjust seasoning, remove herbs and pepper, and serve hot.

Notes

Do not burst the Scotch bonnet unless extra heat is desired.
