Ingredients
  

Sandwich Filling
  • 2 ripe avocados
  • 8 slices whole grain bread
  • 2 cups alfalfa sprouts
  • 1 large tomato sliced
  • 1 cucumber thinly sliced
  • 4 lettuce leaves
  • 4 tbsp cream cheese or hummus
  • 1 tbsp fresh lemon juice
  • 1 tsp olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder

Method
 

  1. Slice avocados in half, remove pits, and scoop flesh into a bowl.
  2. Add lemon juice, olive oil, salt, pepper, and garlic powder to the avocado. Mash lightly.
  3. Wash and dry all vegetables and sprouts thoroughly.
  4. Toast bread slices lightly if desired.
  5. Spread cream cheese or hummus on one side of each bread slice.
  6. Spread avocado mixture evenly over four bread slices.
  7. Layer lettuce, tomato, cucumber, and sprouts over the avocado.
  8. Top with remaining bread slices, slice sandwiches in half, and serve fresh.

Notes

For extra flavor, add sliced radishes, microgreens, or a sprinkle of red pepper flakes.
