Ingredients
  

Fries
  • 2 lbs russet potatoes cut into fries
  • 3 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 8 strips bacon
  • 2 cups sharp cheddar cheese shredded
  • 1/4 cup fresh chives chopped
  • 1/2 cup sour cream optional, for serving

Method
 

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash and cut potatoes into fries. Pat dry with paper towels.
  3. Toss fries with oil, salt, and pepper. Spread in single layer on baking sheet.
  4. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  5. Meanwhile, cook bacon in a large skillet until crispy. Drain on paper towels and crumble.
  6. Remove fries from oven and immediately top with shredded cheese while hot.
  7. Return to oven for 2-3 minutes until cheese is melted.
  8. Top with crumbled bacon and fresh chives. Serve immediately with sour cream if desired.

Notes

For extra crispy fries, soak cut potatoes in cold water for 30 minutes before cooking. You can also use frozen fries to save time - just follow package directions and add toppings in the last few minutes of cooking.
