Crust
  • 1 9-inch pie crust pre-made or homemade
  • 1 egg white optional, for brushing
Filling
  • 6 strips bacon
  • 1 large onion thinly sliced
  • 3 medium tomatoes sliced and patted dry
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 0.5 cup mayonnaise
  • 2 tbsp fresh basil chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika optional

Method
 

  1. Preheat oven to 375°F and pre-bake the pie crust for 10 minutes.
  2. Cook bacon until crispy; crumble and reserve 1 tablespoon of fat.
  3. Caramelize onions in reserved bacon fat until golden.
  4. Slice tomatoes, sprinkle with salt, and pat dry.
  5. Mix mayonnaise, cheeses, salt, pepper, paprika, and basil in a bowl.
  6. Layer onions, bacon, and tomatoes in crust. Spread cheese mixture on top.
  7. Bake for 30–35 minutes until bubbly and golden. Cool before slicing.

Notes

For best texture, cool 10 minutes before slicing. Pairs beautifully with salad or soup.
