Ingredients
  

Meatloaf
  • 2 lbs ground beef
  • 8 slices bacon
  • 1.5 cups mushrooms chopped
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup breadcrumbs
  • 2 eggs
  • 6 slices Swiss cheese
  • 0.33 cup milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook mushrooms, onion, and garlic in a skillet until softened.
  3. Mix beef with remaining ingredients and cooked vegetables.
  4. Shape half the meat mixture, add cheese, top with remaining meat, and seal.
  5. Wrap with bacon and bake 55–65 minutes.
  6. Rest 10 minutes before slicing and serving.

Notes

Use a meat thermometer to ensure internal temperature reaches 160°F.
