  • 1 block feta cheese
  • 4 eggs large
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.25 tsp red pepper flakes optional

Equipment

  • Oven-safe baking dish
  • Mixing spoon

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place feta in the center of the dish and surround with cherry tomatoes.
  3. Drizzle with olive oil and season with garlic, salt, pepper, and red pepper flakes.
  4. Bake for 15 minutes until tomatoes soften and feta is creamy.
  5. Add spinach and create wells for eggs.
  6. Crack eggs into wells and bake 8–12 minutes until eggs are set to preference.

Notes

Serve immediately with crusty bread or enjoy on its own.
