  • 2 pounds baby potatoes halved
  • 8 oz feta cheese block
  • 4 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon zested and juiced
  • 2 tbsp fresh parsley chopped

Equipment

  • Large mixing bowl
  • Baking sheet or baking dish
  • Spatula
  • Knife

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss halved potatoes with olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Spread potatoes cut-side down on baking sheet and place feta block in center.
  4. Bake 35–45 minutes until potatoes are golden and feta is soft.
  5. Add lemon zest and juice, break feta apart, and toss together.
  6. Garnish with parsley and serve hot.

Notes

For extra crispiness, broil for 2–3 minutes at the end of baking.
