Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.25 cup unsalted butter cold, cubed
  • 0.75 cup buttermilk
Filling
  • 8 oz roast beef thinly sliced
  • 4 oz Swiss or provolone cheese sliced
  • 2 tbsp butter melted
  • 1 clove garlic minced
  • 1 tsp fresh thyme or parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Stir in buttermilk until just combined.
  4. Roll dough to ½-inch thickness and cut into shapes. Place roast beef and cheese on half of pieces, top with remaining pieces and press edges to seal.
  5. Mix melted butter with garlic and herbs. Brush tops of biscuits.
  6. Bake 18–22 minutes until golden brown and cheese melted. Serve warm with optional au jus.

Notes

Biscuits can be assembled in advance and baked before serving. Great for parties or family dinners.
