Chicken Base
  • 4 chicken breasts large
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
Creamy Tuscan Sauce
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 0.5 cup chicken broth
  • 0.75 cup Parmesan cheese grated
  • 1 cup baby spinach
  • 0.5 cup sun-dried tomatoes chopped
Topping
  • 1 cup mozzarella cheese shredded
  • 1 tbsp fresh basil optional garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Sear chicken in olive oil until lightly golden, then place in dish.
  4. Sauté garlic, then add cream cheese until melted.
  5. Stir in cream, broth, Parmesan, spinach, and sun-dried tomatoes.
  6. Pour sauce over chicken in casserole dish.
  7. Top with mozzarella cheese.
  8. Bake for 25–30 minutes until bubbly and cooked through.
  9. Rest for 5 minutes, garnish, and serve.

Notes

Letting the casserole rest improves sauce thickness and flavor.
