- Preheat oven to 375°F (190°C) and grease a casserole dish.
- Season chicken with salt, pepper, and Italian seasoning.
- Sear chicken in olive oil until lightly golden, then place in dish.
- Sauté garlic, then add cream cheese until melted.
- Stir in cream, broth, Parmesan, spinach, and sun-dried tomatoes.
- Pour sauce over chicken in casserole dish.
- Top with mozzarella cheese.
- Bake for 25–30 minutes until bubbly and cooked through.
- Rest for 5 minutes, garnish, and serve.
