Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 0.5 tsp cloves
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup molasses unsulphured
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.25 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, and spices in a bowl.
  3. Cream butter and brown sugar until light and fluffy. Mix in molasses.
  4. Add egg and vanilla, mixing until combined.
  5. Gradually mix in dry ingredients until a thick dough forms.
  6. Roll dough into balls, coat in granulated sugar, and place on baking sheets.
  7. Bake 12–15 minutes until edges are set and centers are soft.
  8. Cool briefly on baking sheet, then transfer to wire rack to cool completely.

Notes

Do not overbake; cookies firm up as they cool.
